Instructions
In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, and sliced red onion.
In a small bowl, whisk together olive oil, fresh lemon juice, honey, salt, and pepper until emulsified.
Drizzle the dressing over the salad mixture and toss gently to coat all the veggies evenly.
Add the shaved Parmesan cheese on top and lightly toss again to distribute.
Taste and adjust seasoning if necessary.
