In a small bowl, mix the softened butter with minced garlic, chopped parsley, salt, and pepper until well combined.
Take two slices of garlic bread and spread half of the garlic butter mixture on one side of each slice.
On the unbuttered side of one slice, layer one cup of shredded mozzarella cheese and half a cup of cheddar cheese.
Top with the second slice of garlic bread, buttered side up, creating a sandwich.
Heat a skillet over medium heat. Once hot, add the sandwich to the skillet, cooking for about 3-4 minutes on each side, or until the bread is deeply golden and the cheese has melted.
Remove from the skillet, slice diagonally, and repeat the process with the remaining slices of garlic bread and cheese to make a second sandwich.
