Instructions
In a large mixing bowl, combine the diced cooked chicken, halved cherry tomatoes, diced cucumber, and sliced red onion.
Add the Kalamata olives and crumbled feta cheese to the bowl, gently mixing to incorporate all the ingredients.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
Pour the dressing over the chicken salad mixture and toss gently to coat all ingredients evenly.
Finally, stir in the fresh chopped parsley, adding a burst of flavor and color to the salad.
Allow the salad to rest for at least 10 minutes before serving, letting the flavors meld together.
Notes
Serve the salad in a large bowl or on individual plates, garnished with extra parsley and a few whole Kalamata olives for added flair.
