Season the chicken breasts with salt and pepper on both sides.
In a large skillet over medium heat, add olive oil. Once heated, add the seasoned chicken breasts and sear for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
Pour in the chicken broth and bring to a gentle simmer, scraping up any browned bits from the bottom of the pan.
Stir in the heavy cream, sliced pepperoncini, onion powder, and Italian seasoning. Mix well and let the sauce simmer for about 3-4 minutes until slightly thickened.
Return the chicken breasts to the skillet, spooning the sauce over the top. Sprinkle with shredded mozzarella cheese and cover the skillet. Let it cook for an additional 3-4 minutes, or until the cheese is melted and bubbly.
Once done, garnish with chopped fresh parsley before serving.
