Instructions
In a large mixing bowl, combine the warm water, sugar, and instant yeast. Let it sit for about 5 minutes until it's foamy.
Add in the flour and salt, mixing until a dough forms. Knead it on a floured surface for about 5-7 minutes until smooth and elastic.
Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for 30-45 minutes or until doubled in size.
Preheat your oven to 400°F (200°C).
Once the dough has risen, punch it down and roll it out into a rectangular shape on a floured surface, about ½ inch thick.
Transfer the dough onto a parchment-lined baking sheet.
In a small bowl, mix the olive oil, minced garlic, and dried oregano. Brush this mixture over the dough evenly.
Sprinkle the shredded mozzarella and grated Parmesan cheese generously on top.
Cut the dough into sticks using a sharp knife or pizza cutter, making sure not to cut all the way through.
Bake the breadsticks in the preheated oven for 15-20 minutes, or until the cheese is bubbly and the edges are golden brown.
Remove from the oven and sprinkle with fresh parsley and optional red pepper flakes if desired.
Allow them to cool slightly, then pull apart the breadsticks and serve warm.
Notes
Serve warm with marinara or garlic dipping sauce.
