In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, and sauté for 3-4 minutes until softened.
Add ground beef to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
Stir in Worcestershire sauce, mustard, salt, and pepper. Mix well.
In a large pot, combine the macaroni and beef broth. Bring to a boil, then reduce heat and let it simmer for about 7-8 minutes, or until the pasta is tender.
Stir in the cherry tomatoes, pickles, and half of the cheddar cheese into the beef mixture.
Transfer the beef and macaroni mixture to a greased 9x13 baking dish.
Top with the remaining cheddar cheese evenly over the casserole.
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
Once cooked, let it rest for 5 minutes, then sprinkle fresh parsley on top before serving.
