In a mixing bowl, combine the shredded chicken, mozzarella cheese, chopped spinach, sun-dried tomatoes, garlic powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are combined.
Lay one flour tortilla flat on a clean surface. Spoon half of the chicken mixture onto one half of the tortilla, leaving the edges clear.
Fold the tortilla over the filling to create a half-moon shape. Press down gently to seal the edges. Repeat with the second tortilla and remaining filling.
Lightly spray the tops of the wraps with olive oil to help them crisp up in the air fryer.
Place the wraps in the air fryer basket in a single layer, making sure they don’t touch.
Air fry for 8-10 minutes or until golden brown and crispy, flipping halfway through for even cooking.
Once cooked, remove the wraps from the air fryer and let them cool for a minute before slicing them in half.
